At SUSHITAINABLE, we source most of our fish from Gotō Suisan, Inc., an offshore aquaculture company that takes full advantage of Gotō’s exceptional fishing environment.

The fish at Gotō Suisan are raised with a focus on their natural biorhythms, mimicking human care. During hot summer days, feeding schedules are adjusted to cooler times, and the amount of food is tailored to match the fish’s appetite. To enhance the fish’s health, camellia leaves—a local specialty of Gotō—are used to support intestinal regulation, ensuring the fish are free from any unpleasant odors. Additionally, flounder are cultivated using underground seawater enriched with natural minerals from spring water, producing fish of exceptional taste and nutritional value.

The processing facility, located right next to the fish farm, ensures the highest level of freshness. This facility operates sustainably, processing only the fish it receives and doing so immediately after they are harvested. State-of-the-art quick-freezing technology minimizes stress on the fish while preserving their natural freshness and quality. This careful process delivers authentic, Japan-quality fish to U.S. consumers, ensuring unparalleled flavor and nutritional integrity.
